You might have now know that the dish is made from roasted eggplants. If the raw eggplants are roasted over coals, it adds an extraordinary flavor to it. So try roasting the raw eggplants in Tandoors. In case charcoal based tandoori oven is not available at your place, try roasting it over an open flame but keep the flame a bit low. A high open flame will only burn the eggplant skin but the inside won’t be cooked enough. let’s proceed to real kitchen thingy. Using an oven is not really a good method which will ruin the smoky flavor of the dish. While buying the Eggplants, don’t go for the big sizes as they might contain ripe seeds inside. Ingredients To Make Brinjal Bharta:
- medium sized eggplants -1/2 kg or 3 numbers
- Big size onion chopped finely – 1
- Tomatoes chopped finely – 2
- Pasted pure garlic or crushed garlic cloves (Do not use packet ones) – 1 tablespoon/ 4 cloves
- Pasted fresh ginger root – 2 tablespoon
- Kashmiri red chili powder – 1 teaspoon
- Small size green chili chopped -3 to 4
- Chopped coriander leaves – 1 tablespoon
- Mustard oil – 1 to 1.5 tablespoon
- Salt as required – Quarter or half teaspoon
Baingan Bharta Recipe With Step By Step Photos And Guide:
Keep all the ingredients ready with the amount as instructed above before you proceed to the below steps.
Rinse the raw Eggplants with water properly and wipe the water from it using a napkin. Now apply some mustard oil all over it gently and then make some holes on the skin using a knife. This is done to evaporate the water from inside it.
Place it for roasting over a fire or inside a tandoor. (Keep in mind the earlier mentioned tips.) Turn the brinjals or flip it after every 1 to 2 minutes. This is done to maintain the proper roasting evenly all over the raw eggplants.
Check if the inside is cooked properly using a knife. If the knife slides in easily without much resistance, it is supposed to be cooked by then. Don’t let the outer skin burn too much until the inner flesh is cooked.
Once you are satisfied that is done the cooking and the outer skin is burnt enough, take out the Eggplant from fire and peel the skin. Do not rinse it with water right away. It will make the skins difficult to remove if it gets wet. Let it get cold for a moment and then remove the skins gently.
Once the skin is removed, wash it. But, don’t pour water over it as it will ruin the smoky flavor. Get some water with your cleaned hands and wash the left skin nice and gently.
Now use a knife and chop/mash the peeled baingan pulp completely. Now the Eggplant is ready for another cooking process.
Now, heat oil (Amount as instructed) in a pan or kadai or a similar container. If you add mustard oil, wait until the smell of the oil changes from its natural odor. In the case of refined oil, change of oil odor does not require.
One the oil is ready, add the chopped Onion, Garlic cloves/paste, and Ginger. And the add chopped chili and stir them all thoroughly. Keep them heating for a little while and keep on stirring thus it does not get stick to the container.
Now add the chopped tomatoes as instructed and mix it too with the rest ingredients properly. Saute the mixture until the oil starting to separate from it. Don’t keep too much flame or fire during this process.
You may now apply the red chili powder to the mixture and stir it evenly. Keep it for a little moment and keep on stirring thus the chili powder get loses its raw odor.
Now you may add the prepared Baingan pulp to the mixture. Stir the Eggplant pulp well and evenly with the other ingredient mixture.
It’s time to season with required salt. Stir it thoroughly and keep cooking for some more 5 minutes.
Finally, it’s time to add some extra flavor to it with coriander leaves. Stir it well so that the coriander leave aroma blends well over the dish. Keep it for 1 more minute covered and then it’s ready to serve.
