Ingredients To Make Sambar:
Here is the ingredients bellow to make your favorite sambar.
Tuvar dal(grain) 1 cup
Vegetables like 1 ½ cup
(Okra, beans, red pumpkins, tomato, onions, drumstick)
Seedless tamarind 1 tablespoon
(Soaked in ½ cup water)
Sambar powder 1 tablespoon
Red chili powder 1 teaspoon
Turmeric powder ½ teaspoon
Molasses (treacle) 20 grams
Pinch of asafoetida (hing)
Ghee 2 teaspoon
For Tempering /Tadka of Sambar
Oil 2 tablespoon
Dry red chili 2 pices (broken)
Mustard (whole) 1 teaspoon
Fenugreek (methi) ¼ teaspoon
Peel and crushed garlic 3-4 pices
Curry leaves 8-10 pices
Cumin ¼ teaspoon
Guide to Make Sambar:
So here is the recipe of sambar with step by step photos
First to make the tamarind paste, take some worm water and soak seedless tamarind for 15-20 minutes to get soft.
Once your tamarind gets soft, than squeeze the tamarind and remove the pulp, now stain it and stock your tamarind paste aside.
Boil 1 cup of tuvar dal(grain) in pressure cooker till your dal boiled properly, once your dal cook open the lid of pressure cooker and smash lentils
Now add all the vegetable (as you like) in cooker along with smash dal and stir it well.
Add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, salt, molasses 20 grams, and pinch of asafoetida, and add 3 cups of water and mix it well.
Now cook it well for sometime in low flame.
Now add 1 tablespoon tamarind paste and 1 tablespoon sambar powder and add water if required.
Now cook it for 10-15 minutes in medium flame, if your vegetables are cooked properly than it’s done, now keep it aside.
Now heat 2 tablespoon oil in a pan, add 1 teaspoon mustard seeds, curry lives 8-10 pices, 2 broken red chillis, 3-4 crushed garlic, ¼ teaspoon fenugreek and ½ teaspoon cumin and fry theme.
Now add your mixture of sambar, what you’re making in pressure cooker before, and cover the cooker with lid immediately.
After 1 minute open the lid of cooker, and mix it properly.
Now add 2 teaspoon ghee on top for better aroma and flavor and garnished with chopped coriander leaves.
Now yours favorite hot and spicy sambar is ready to serve.
Important Notes While Making Sambar:
- Cook your dal(grain) properly and smash it properly.
- Try to make your sambar less oily.
- Don’t get burnt your herbs.
- Boil your vegetable properly.
- Cover the lid immediately while tempering or tadka.
- Make whole process in medium low flame.
