From so many varieties of noodles today I’m going to explain about recipe of vegetable soft noodles, this vegetable noodles recipe is so easy to prepare and also tastes good. For this recipe of Chinese vegetable soft noodles recipe i have added lot of vegetables to make it healthier. You can even use whole wheat noodles to make it even healthier. Here i have used some of my favourite vegetable, but you can use some other vegetable also, if you like. So today we will learn how to make Mixed Vegetable Noodles with step by step recipe. So let’s make a try.
Ingredients To Make Vegetable Soft Noodles
Here is the ingredients bellow to make vegetable soft noodles.
Chinese noodles – 100 grams to 125 grams
Onion -1 (shredded)
Cabbage – 1/2 cup thinly sliced
Carrot – 1 medium size (julienned)
Capsicum – 1 medium size (julienned)
Beans – ½ cup (julienned)
Spring onion -½ tablespoon
Oil -2 tablespoon
Dark soya sauce – 2 teaspoon
green chilli sauce – 1 teaspoon
Black pepper powder- as per required
Testing powder (Ajina Moto) -1 pinch (optional)
Non fruit vinegar- ½ teaspoon
Salt as per required
Instruction to make vegetable soft noodles
- Add noodles in hot water and boil it.
- Drain the boiled noodles and pour cooled water in that and store it dry and keep aside.
- Cut all garden fresh vegetable and keep aside.
- Heat oil in a pan and add all vegetable and satire it till half fried.
- Add all herbs as per require and toss it in high flame for 1-2 minutes.
- Add spring onions as garnished and serve hot noodles in plate with some sauce.
Step by step Guide to make vegetable soft noodles
To boil noodles heat enough water in a pan with drop of oil.
Add noodles in hot water and stir it and cook it for sometime till they are just boiled.
Once noodles are boiled well Drain the noodles in a colander and run cold water over it to prevent it from sticking to each other. And keep noodles aside.
Heat oil in a pan and add vegetable like cabbage, carrot, capsicum, beans and stir it for sometime in high flame.
Now keep stirring continuously till vegetable are half cooked.
Add noodles before vegetables become completely soft and add soya sauce, green chilli sauce, testing powder, black pepper powder non fruit vinegar and salt and keep stirring.
Keep tossing together for 1-2 minutes in high or medium high flame, till vegetable and noodles are mixed properly and add spring onion and mix it well.
Now test it and add some more herbs like salt, pepper powder, chilli sauce if required and switched off the flame after shallow frying noodles.
Now serve your hot vegetable soft noodles with tomato ketchup and green chilli sauce along with any Chinese side dishes if require.
- Boil the noodles carefully and store it after cooled.
- Whole cooking or tossing process should be done in high or medium high flame.
- You can change your spicy level, if you need little spicy soft noodles than add some chopped green chilli in that as per require.
- Serve your favourite noodles piping hot for good test and good health.
